Beet Avocado Salad

 Beet roots are becoming household favorites. Here is one of the favorites salad -


Ingredients:
  1. Cooked Beet Root - 2 Cups
  2. Avocado - 2 Large
  3. Fresh Tomato - 1 Cups - Variety of your choice - I am using cherry tomatoes.
  4. Red Onion - 1/4 Small
  5. Goat Cheese - 4 oz
  6. Balsamic Vinaigrette - as per your taste
  7. Salt and Black Pepper - as per your taste

Optional:
  1. Extra Virgin Olive Oil- 1 TSP
  2. Arugula - handful

Method:
  1. Cooked Beet root by peeling off skin.
  2. Wash and chop all the vegetables.
  3. Layer beet root, tomato, onion, avocado, goat cheese on top of spring mix. Drizzle balsamic vinaigrette and EVOO if using. Sprinkle salt and freshly crushed black pepper.
