Beet roots are becoming household favorites. Here is one of the favorites salad -
Ingredients:
- Cooked Beet Root - 2 Cups
- Avocado - 2 Large
- Fresh Tomato - 1 Cups - Variety of your choice - I am using cherry tomatoes.
- Red Onion - 1/4 Small
- Goat Cheese - 4 oz
- Balsamic Vinaigrette - as per your taste
- Salt and Black Pepper - as per your taste
Optional:
- Extra Virgin Olive Oil- 1 TSP
- Arugula - handful
Method:
- Cooked Beet root by peeling off skin.
- Wash and chop all the vegetables.
- Layer beet root, tomato, onion, avocado, goat cheese on top of spring mix. Drizzle balsamic vinaigrette and EVOO if using. Sprinkle salt and freshly crushed black pepper.
