Ingredients

  • 1 cup uncooked white rice
  • 2 cups vegetable broth
  • Salt and pepper
  • 1 (15-ounce) can red kidney beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 stalks celery, diced
  • 1 green bell pepper, seeded and diced
  • 2 cloves garlic, minced
  • 2 teaspoons paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon crushed red pepper flakes
  • Optional garnish: Chopped fresh cilantro and sour cream

Instructions

  • In a pot, heat the oil over medium heat. Add the onion, celery, and bell pepper. Sauté for 4-5 minutes until softened.
  • Add the garlic and all spices. Sauté for 1-2 minutes until fragrant.
  • Stir in rice, broth, and beans. Season with salt and pepper.
  • Increase heat to high and bring mixture to a boil. 
  • Reduce heat to low, cover, and cook for 15-20 minutes, or until the rice has absorbed all of the liquid.
  • Garnish with chopped cilantro, if using. Serve warm.
