Ingredients
- 1 cup uncooked white rice
- 2 cups vegetable broth
- Salt and pepper
- 1 (15-ounce) can red kidney beans, drained and rinsed
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 stalks celery, diced
- 1 green bell pepper, seeded and diced
- 2 cloves garlic, minced
- 2 teaspoons paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon crushed red pepper flakes
- Optional garnish: Chopped fresh cilantro and sour cream
Instructions
- In a pot, heat the oil over medium heat. Add the onion, celery, and bell pepper. Sauté for 4-5 minutes until softened.
- Add the garlic and all spices. Sauté for 1-2 minutes until fragrant.
- Stir in rice, broth, and beans. Season with salt and pepper.
- Increase heat to high and bring mixture to a boil.
