Roasted Delicata Squash

I was introduced to this winter squash, Delicata Squash by a dear neighbor. It is so good you won’t miss French Fries. It’s simple roasting recipe. It’s easy enough to get your kids involved in cooking. The color and roasting aroma gets them interested in eating also. Kids as young as age 6 months and above can have this. For younger ones you would need to mash before feeding. 



Ingredients:
  1. Delicata Squash - 1 Medium 
  2. Extra virgin olive oil - 1 TBSP 
  3. Salt - As per taste 

Method:


  1. Wash the squash thoroughly. You will be roasting along with the skin. Cut the both ends so you have flat surface. 
  2. Now with sharp knife cut the squash in half. Scoop out all the seeds and fiber. 

3. Slice into half circle, moon shape slices. The thinner the slices, quicker those will roast.
4. Mix in olive oil and salt. Arrange the slices separately on baking sheet.

5. Preheat oven at 400 degree Fahrenheit. Roast the slices for 10 min.

6. Flip all on another side and roast for another 10 min. I like those crispy. If you want to keep these slices soft you can keep for 5-7 min. Here is how crispy look. They were finished before even they cooled down. Yes, these are that good. Eating skin is optional. For me, it adds a nice crunch.
