Peanut Chutney


Peanut Chutney is one of the staples in my household. I sprinkle it on avocado, salad. It goes well as a condiment with sandwich, yogurt, roti, dosa, uttapam and even with rice. 

Ingredients:
1. Peanut- 1 Cup
2. Red Chili Powder- 1 TBSP 
3. Cumin Seeds- 1 TBSP 
4. Asafetida - 1 Pinch
5. Salt - 1 TBSP 

Method: 
1. Roast peanuts to brown color. I can use microwave or on stovetop. I find it easy to roast in microwave so I am describing my method. In a microwaveable plate, add all peanut and 1 TBSP water. With spoon, make sure all peanut do get wet. Keep those aside for 5 min. 


2. Microwave on high settings for 2 min. Stir those around and microwave for another 2 min. Stir those around and this microwave only for 1 min. You will wonderful brown color and aroma of roasted peanuts. Those are hot so let those cool down, say for 10 min.
3. The skin will peel off very easily at this point. I take out most of it but you can leave it if you want.

4. In a grinder add all spices on top of roasted peanuts. Grind it only until you get a coarse mixture. I have Vitamix, I grind those upto level 1 and 5 and bring back 0. Well, Chutney is ready.
